Tetsuya's

As you know food is one of my two favourite past-times so do bear with me for yet another blogpost on food. And if you sense something is amiss with the images, you are not wrong. I lost some of the photos while syncing my iPhone with my PowerBook; the first time it has happened so I shall be forgiving. Otherwise . . .

What can I say about Tetsuya's that you don't already know? The ambience is good, the service is great and the food is gorgeously scrumptious. No OMG moment, and certainly none of the silly wanking "let the ingredients get to know each other" quips you get from TV chefs these days, just good solid food which you can eat on a regular basis, like once a month perhaps?

Last evening at Tetsuya's, we have a service staff who is a dead ringer for Helen Mirren, albeit a petite version. She is poised, confident, witty and very gracious in handling us. When I apologised for the snow of breadcrumbs on the floor carpet and on the verge of tears (just kidding), she came back with, "Oh that's quite alright, it was I who wasn't quick enough to sweep them up!" Doesn't it make you want to peck her on the cheek?

I have to say the whole evening was very pleasant although I wondered why:

a. The lights were dimmed at 2000 hr
b. Cold air were pumped up at 2100 hr
c. Very common cutlery and crockery were still being used
d. The three Cantonese-speaking women who were speaking louder with each glass of wine they drank, were not evicted

Anyway back to the food which was why we were there for in the first place. The missing images would have shown you the following dishes:

a. Amuse bouche of sweet corn soup with a dollop of saffron ice cream
b. Trout roe on bed of salmon with mayo
c. Trio of scampi - one wrapped in prosciutto and fried lightly, one dipped in salt-water and dredge through lemon thyme olive oil
d. Confit of Ocean Trout - Tetsuya's signature dish
e. Queensland crab wrapped in nori and buckwheat
f. Grilled barramundi on baby fennel with black bean sauce

. . . and the rest are in pics as below!

Twice-cooked spatchcock

Lightly seared Wagyu beef with mushrooms and wasabi & fresh lime

lentil and sweet chestnut

Beetroot and blood orange sorbet with latte custard

Tetsuya's version of strawberry cheesecake

Espresso and date ice cream in a milk broth

Espresso served in a Japanese-style tea-cup

If your palate is titillated then know it's worth the wait and wait you must, for instance I only managed to secure this September date with Tetsuya's back in April earlier this year. Of if not, wait till another APEC hits town and you will be like me back in 2006, get into Tetsuya's with only a four-day wait.
